This matcha is ceremonial grade, which means it comes from the first harvests of spring: the youngest, most tender leaves, carefully picked by hand. Three weeks before harvest, the tea bushes are shaded to enrich the L-theanine content, reduce bitterness and intensify the green color.

After harvesting, the leaves are transformed into tencha: stems and veins are removed to preserve only the best. They are then slowly ground between two stone millstones, an ancestral craft that guarantees a fine, silky powder rich in aromas and nutrients.

Comment est fabriqué notre thé matcha ?

Avant d’arriver dans votre bol, le matcha traverse un processus de culture et de transformation précis, hérité de la tradition japonaise.

Tout commence plusieurs semaines avant la récolte, lorsque les théiers sont ombragés afin de stimuler la production de chlorophylle et de L-théanine.

Cet ombrage intensifie la couleur verte et la douceur naturelle du matcha.

Les jeunes feuilles sont ensuite récoltées avec soin, passées à la vapeur pour préserver leur fraîcheur et empêcher l’oxydation.

Ensuite séchées, les tiges et nervures sont retirées pour ne conserver que la partie la plus noble de la feuille (tencha).

Enfin, ce tencha est lentement moulu jusqu’à obtenir une poudre extrêmement fine. Ce broyage permet de préserver les arômes et d’obtenir ce goût profond.
