    This summer, at our exclusive event in partnership with the INSTINCTthe TSUKI Strawberry Matcha Flan was a particularly memorable creation. A fresh, elegant and deliciously gourmet dessert that was a hit with all visitors.

    In response to your enthusiasm, we've decided to unveil a revisited recipe, so that anyone can easily reproduce it at home. This creamy flan combines the richness of Japanese TSUKI matcha, the sweetness of cream and the freshness of strawberries, for a perfect dessert to share with family and friends.

    The secret to its success? TSUKI Culinary Matcha, an exceptional Japanese green tea, specially designed for pastries and recipes.


    TSUKI & INSTINCT: a matcha collaboration

    At TSUKI, we're committed to democratizing quality matcha in France, while respecting its Japanese origins and authenticity. That's why we've teamed up with INSTINCT, a fine pastry and chocolate shop, to create a gourmet event to introduce the public to the world of matcha.

    For a whole weekend, we offered exclusive matcha creations, including the famous Flan TSUKI, designed by INSTINCT's head pastry chef.
    Result? A real hit! The flan was sold out in record time, and many of you asked us for the recipe so you could make it again at home.

    This collaboration is a perfect illustration of our mission: to show that matcha can go beyond the simple latte and become a key ingredient in cooking and pastry-making.


    Why is TSUKI matcha flan so popular?

    TSUKI's matcha flan captivates with its perfect balance:

    The essential role of matcha in this recipe

    The quality of the matcha used is essential to obtain a flan with a beautiful color, characteristic of matcha, and a refined taste. For this recipe, we use TSUKI Culinary Matcha :

    • Origin: Shizuoka, Japan, from family farms respecting Japanese traditions.

    • Cultivar: Yabukita, renowned for its balanced notes of sweetness and intensity.

    • No additives or added sugars: pure matcha to enhance all your recipes.


    Recipe for Creamy Matcha Flan (by INSTINCT)

    Ingredients (for 6-8 portions)

    For the matcha cream :

    For the shortcrust pastry :

    • 200g butter

    • 1.5g fine salt

    • 140g powdered sugar

    • 34g almond powder

    • 350g flour

    • 70g eggs

    For the strawberry confit:

    • 150g strawberries

    • 15g sugar

    • 2g pectin NH

    • 12g lemon juice


    Preparation steps

    Prepare the shortcrust pastry:

    • Mix the butter with the powders (powdered sugar, salt, almond powder, flour).

    • Add the eggs and mix just until smooth.

    • Cover with film and chill for 6 hours.

    • Roll out to a thickness of 5 mm, shape into a 20 cm circle and set aside in a cool place.

    Making the matcha cream :

    • Heat the milk and dilute the TSUKI culinary matcha with a matcha whisk.

    • Mix sugar, cornflour and egg yolks until white.

    • Pour in half the hot milk, whisk, then return to the pan.

    • Cook over low heat, stirring until thickened, then boil for 30 sec.

    • Pour over the shortcrust pastry and bake for 45 min at 170°C.

    Strawberry confit :

    • Blend the strawberries with the lemon juice.

    • Heat to 45°C, add sugar + pectin, then boil for a few seconds.

    • Chill in the fridge.

    Final editing :

    • Allow the cooked flan to cool completely.

    • Top with strawberry confit, then add fresh strawberry pieces.

     

     

    Tips for successful homemade matcha flan

    • Use high-quality culinary matcha: cheap matcha will give a dull color and an overly bitter taste.

    • Respect resting and cooking times for perfect texture.

    • Vary the fruit according to the season to rediscover the recipe all year round.

    • Serve chilled: the flan tastes even better after 2 hours in the fridge.
