🍵 Matcha - Origin & Benefits

Matcha is a very fine Japanese green tea powder, obtained from leaves that are dried and then stone-ground.

There are two main grades:

  • Ceremonial: for pure consumption (hot water), softer, finer
  • Culinary: for recipes, lattes or smoothies, more robust and plant-based

The Japanese have been consuming matcha for centuries, notably for its effects on energy, concentration and overall health.

Matcha is a great alternative to classic coffee or tea. It is :

  • Rich in antioxidants (catechins)
    Mild caffeine for sustained energy
  • Natural source of mild caffeine for long-lasting energy
  • Balanced with L-theanine, an amino acid that helps you stay focused without stress
  • Beneficial for the skin, digestion and immune system
  • Ideal for reducing coffee consumption without wasting energy

Here are the most common effects:

  • Stable energy without nervous peaks
  • Improved concentration and memory
  • Powerful antioxidants (notably catechins such as EGCG)
  • Helps natural detoxification
  • Stimulates metabolism
  • Strengthens the immune system

Classic tea is brewed → you consume only the brewed water.

With matcha, you ingest the whole crushed leaf, so you get 100% of the nutrients, fiber and antioxidants.

Coffee stimulates strongly... then comes down sharply. Matcha releases its effect more slowly and for longer.

Matcha contains about 3x less caffeine, but coupled with L-theanine, it helps you stay focused.

There's no jitteriness or fatigue with matcha.

It's not a question of one matcha being "better" than another, but of a different use. Ceremonial matcha is made from young tea leaves, harvested in spring, then ground very slowly to an extremely fine powder. It has a mild, round, umami taste, a bright green color, and is ideal for drinking simply with hot (or cold) water.

Culinary matcha, on the other hand, is made from more mature leaves. It has a more herbal taste, sometimes slightly bitter, and a slightly less fine texture. It's perfect for mixing with milk (in lattes), adding to smoothies or using in cooking (desserts, sauces, pastries). It's also more affordable.

If you want to drink your matcha neat or as a latte, choose ceremonial. If you want to cook it, culinary is more suitable.

In a nutshell:

  • Ceremonial: milder taste, finer texture, perfect as a pure drink with hot water or milk.
  • Culinary: more robust, slightly more bitter, ideal for sweet and savoury recipes.

Our matcha is grown in Japan, in two regions renowned for their expertise: Shizuoka (for culinary matcha and original matcha) and Kagoshima (for vanilla matcha).

It is produced by a local farm that grows tea using traditional Japanese methods, with particular attention paid to the quality of the leaves and respect for the environment.

Our powders are then slowly ground on a stone grinder to guarantee an ultra-fine texture and a beautiful green color, without any additives or preservatives.

All our matchas come from the Yabukita cultivar, the most widespread in Japan.

This cultivar is renowned for its ideal balance: a lovely herbal sweetness, slightly umami notes, and very moderate bitterness. It produces a matcha that is accessible, versatile and true to the taste of real Japanese tea.

🥄 Use, storage & care

Matcha is sensitive to light, humidity and heat. To preserve its freshness :

  • Keep it in its bag or in an airtight box.
  • Store away from light, in a dry place, at room temperature.
  • Avoid storing near heat sources

Best consumed within 3 to 4 months of opening. It can still be consumed several months later, but its color and taste may fade.

Yes, but only if the packaging is tightly sealed. The fridge contains humidity and odors that can spoil matcha if the bag is not properly sealed.

Here are our recommendations:

  • Keep bag tightly closed (solid zip or airtight box)
  • Allow to return to room temperature before opening, to avoid condensation.
  • Avoid going back and forth between hot and cold: if you open your matcha every day, it's best to leave it in a cupboard away from light and heat.

👉 The fridge is useful for prolonging freshness if you're storing matcha for the long term, but it's not mandatory if you consume your sachet within 1-3 months.

A good matcha should have a bright green color and a fresh, herbal aroma.

If it becomes dull or loses its flavor, it can still be used in cooking, but is no longer optimal for drinking neat.

👉 Please note: culinary matcha naturally has a less vivid color and a more bitter taste than ceremonial matcha, due to its production method (more mature leaves, different harvests).

So don't compare the color or taste of culinary matcha with ceremonial matcha. To judge its freshness, compare it to the way it looked and smelled when you first opened it.

  • For a pure drink: 1 g (1 spoon) + 40-60 ml hot water (not boiling, ~70-80°C maximum)
  • Whip in a W-shape with a chasen (bamboo whisk) until frothy.
  • For a latte: add vegetable or animal milk to your preparation

Visit our blog for more details.

Chasen (bamboo whisk): rinse with lukewarm water after each use, without soap. Leave to air-dry (preferably on a whisk stand). Do not soak. See our article on the subject.

Spoon and bowl: same procedure as the whisk, but avoid soap and wipe with a dry cloth.
