Matcha blinis - Tsuki x Instinct

Try the matcha blinis! These little soft pancakes are perfect for adding a touch of originality to your aperitifs.
Ingredients
- 75g flour
- 4g of matcha
- A knob of butter (around 10g)
- 8g crumbled bakers' yeast
- 50g egg (about 1 egg)
- 15g of whole cream
- 1 pinch of salt
- 100g whole milk
Instructions
- Mix the yeast and flour using the Maryse sauce.
- Add salt and matcha to the mixture.
- Warm the milk and cream, then add the mixture to the preparation. Homogenize.
- Clarify the egg, then add the egg yolk to the mixture.
- Mix to homogenize.
- Cover the preparation with cling film and leave to rest for around 1h30 in a warm room.
- Beat the egg white until stiff and add to the mixture.
- Mix delicately with Maryse.
- In a pan, melt the butter.
- When the pan is hot, pour the mixture to form a large blini, or several small ones. Repeat the task to finish the blini maker
Blinis can be served hot or cold and garnished with spreads, vegetables, cheese, cold meats as you wish!
