This matcha is ceremonial grade, meaning it comes from the first spring harvests: the youngest and most tender leaves, carefully handpicked. Three weeks before harvest, the tea plants are shaded to enhance the L-theanine content, reduce bitterness, and intensify the green color.
After the harvest, the leaves are processed into tencha: stems and veins are removed, leaving only the finest part. They are then slowly ground between two stone mills, an ancient artisanal technique that guarantees a fine, silky powder rich in aromas and nutrients.
